Fast Lemon Pudding

4 oz margarine
4 oz self raising flour
4 oz sugar
2 eggs
rind of lemon

Mix all together, heaped teaspoon lemon curd in 4 bowls, divide mixture between bowls and heat in microwave for 1 to 2 minutes. Beware, the lemon curd gets hot! Allow to cool before serving. Test duration required for microwave as power levels vary.
