Contact Person: Axis Ingredients 2 large unwaxed lemons 125g butter, cubed 190g caster sugar 3 eggs 2 medium sized jam jars Grate the lemons zest and to heatproof bowl with butter and sugar. Heat very gently and add eggs, then stir until mixture thickens. This can be done by heating over another pan with water, ensuring that the heatproof bowl does not touch the bottom of the second pan. Strain the curd through a fine sieve and place into sterilised jars. It keeps for 2 weeks in a fridge. |
